| 1 stick butter |
| 1/2 cups all-purpose flour |
| 1 cup white sugar plus 1/2 cup brown sugar |
| 2 tsp baking powder |
| 1/2 tsp salt |
| 1/2 cup Barber’s buttermilk |
| 1 cup Barber’s whole milk |
| 1 teaspoon vanilla extract |
| 4 cups whole berries - fresh or frozen - blackberries, blueberries, raspberries |
- Preheat oven to 350 degrees. Place butter in deep baking dish and place in oven while heating.
- In mixing bowl whisk together flour, sugars, baking powder and salt.
- Add Barber’s buttermilk and Barber’s whole milk and vanilla extract and stir until just combined well.
- Remove hot baking dish from oven and pour batter immediately into it.
- Sprinkle whole berries evenly over top of batter. Return pan to oven.
- Bake approximately 45 minutes or until middle is set. Cool partially on wire rack. Serve warm or at room temp.
Tips:
The buttermilk in this recipe cuts the “too sweet” quality that cobblers often have. The buttermilk flavor also complements the berries. |
