Tropical Nog

  • 2 cups Barberís Egg Nog
  • 1 cup crushed pineapple (canned in itís own juice or fresh pineapple chopped)
  • 1 banana (can omit if you are not a banana lover)
  • Ice
  • 1 small can pineapple rings well drained or fresh pineapple rings
  • 1 tsp rum extract or flavoring


  1. Place Barberís eggnog and crushed or chopped pineapple in a blender. Blend until frothy and smooth. Add ice and blend again till thick and creamy smooth.
  2. Pour in extract and pulse to blend.
  3. Pour into glasses and garnish with a pineapple ring on lip of glass and add a festive straw.
  4. (The pineapple makes this a very refreshing way to use eggnog) Serves 2 can be doubled or tripled.
