Tropical Nog [ back to Lattes / Coffees ]

INGREDIENTS
2 cups Barber’s Egg Nog
1 cup crushed pineapple (canned in it’s own juice or fresh pineapple chopped)
1 banana (can omit if you are not a banana lover)
Ice
1 small can pineapple rings well drained or fresh pineapple rings
1 tsp rum extract or flavoring

DIRECTIONS
  1. Place Barber’s eggnog and crushed or chopped pineapple in a blender. Blend until frothy and smooth. Add ice and blend again till thick and creamy smooth.
  2. Pour in extract and pulse to blend.
  3. Pour into glasses and garnish with a pineapple ring on lip of glass and add a festive straw.

(The pineapple makes this a very refreshing way to use eggnog) Serves 2 can be doubled or tripled.
