New Potatoes with Barber's Party Dip [ back to Entrees ]

INGREDIENTS
Small new potatoes, cooked until softened in a pan of water. Make sure they are soft enough to eat but not so mushy that they fall apart.
Barber’s Party Dip
Freshly ground black pepper
Chopped Fresh Parsley

DIRECTIONS

Use a melon baller or rounded spoon to create a hole in the top of each potato. Discard extra potato. Arrange potatoes on serving tray or platter. Cut the bottom of any potatoes that won’t sit flat with a knife. Fill hole in top of potatoes with Barber’s Party Dip. Sprinkle over all with chopped parsley. Serve warm or room temp.
