New Potatoes with Barber's Party Dip

  • Small new potatoes, cooked until softened in a pan of water. Make sure they are soft enough to eat but not so mushy that they fall apart.
  • Barberís Party Dip
  • Freshly ground black pepper
  • Chopped Fresh Parsley

Cooking Directions

  1. Use a melon baller or rounded spoon to create a hole in the top of each potato. Discard extra potato. Arrange potatoes on serving tray or platter. Cut the bottom of any potatoes that wonít sit flat with a knife. Fill hole in top of potatoes with Barberís Party Dip. Sprinkle over all with chopped parsley. Serve warm or room temp.
