Zippy Barber's Buttermilk Battered Onion Rings [ back to Bites ]

INGREDIENTS
3 cups Barber’s buttermilk
1 1/2 cup all-purpose flour
A dash or two of hot pepper sauce (Tabasco or other favorite)
Salt
2 cups flour seasoned with salt and pepper and paprika
6-7 large Vidalia onions (or other sweet onion)
Oil for skillet or deep fryer

DIRECTIONS
  1. Peel and slice onions 1/2 to 1” thick and separate into rings.
  2. Mix together the Barber’s buttermilk, flour, hot sauce and salt. Use a spoon or whisk to blend well.
  3. Place onion rings in batter, covering all rings. Chill for a few hours.
  4. To Cook: Heat oil in deep skillet or deep fryer until it sizzles.
  5. Remove onions in batter from refrigerator. Working with one ring at a time, shake off excess wet batter and dredge each in seasoned flour coating.
  6. Immediately put in hot oil and fry until golden brown. Drain on paper towels and serve immediately, or place on baking sheet in oven turned to 300 degrees until ready to serve. Delicious with a bottled dressing dip or with our old favorite, ketchup!
