| Small new potatoes, cooked until softened in a pan of water. Make sure they are soft enough to eat but not so mushy that they fall apart. |
| Barber’s Party Dip |
| Freshly ground black pepper |
| Chopped Fresh Parsley |
- Use a melon baller or rounded spoon to create a hole in the top of each potato. Discard extra potato.
- Arrange potatoes on serving tray or platter. Cut the bottom of any potatoes that won’t sit flat with a knife.
- Fill hole in top of potatoes with Barber’s Party Dip.
- Sprinkle over all with chopped parsley. Serve warm or room temp.
